This is a cheap and tasty way to use up left over mash and either left over cabbage, or freshly cooked greens, which take only minutes to prepare and cook. You can use these as a side dish or they make a very nice snack on their own. You can top with a fried egg, a bacon rasher or a slice of smoked salmon.
bOg green cabbage like Savoy, kale or spring greens, shredded
500g cold mashed potato
6 spring onions, finely chopped
60g Caerphilly cheese, crumbled
A little plain flour
A knob of butter
Salt and pepper
- If you are cooking the cabbage from scratch, bring a saucepan of water to the boil and add the greens. Cook them for 3-4 minutes until tender. Drain and rinse in cold water. Dry off.
- Put mash into a bowl. Add the greens, onions, cheese and seasoning and remember that the cheese can be salty, so taste as you go. Mix well.
- Shape the mixture into 6 patties and dust with a little flour.
- Melt the butter in a pan and fry the patties on each side until browning and cooked through.
