4 Chicken portions (about 1lb)
salt & pepper
1 tbsp olive oil
8 oz onion, cut roughly
1lb carrots peeled & cut into thick slices
1 celery cut thinly
2 oz roughly chopped bacon
200ml apple juice
1 can butter beans, drained & rinsed
1 bunch watercress, washed & chopped
juice of 1 lemon
1. Heat the oil in flameproof casserole. Add the onion, carrots, celery and bacon. Fry for 2-3 minutes.
2. Take out and fry the chicken for 5 minutes each side until going brown and put the other ingredients back to the casserole.
3. Mix in the apple juice and butter beans. Bring to the boil on the hob and then transfer to the oven set at 180’C (350’F) mark 4 for about 1 hour or until everything is tender.
Stir in the watercress, lemon juice and seasoning to serve
