Saturday Sausage Cake

 Saturday Sausage Bake 
I took this very useful recipe from the Archer's cookbook - I am a huge fan of the programme. For those who share my enthusiasm for following life in the village of Ambridge, this particular dish comes from the kitchen of Pat Archer. Pat serves this with hot wholemeal rolls. This serves 4.
I tbsp olive oil
450g pork sausages
6 rashers streaky bacon, cut into strips
2 leeks, sliced
2 onions, chopped
1 tbsp flour
2 potatoes, thinly sliced
1 can chopped tomatoes
2 tbsp tomato puree
275ml stock or cider
Salt and pepper
 
Heat the oil in a flameproof casserole and fry the sausages. When browned, remove from the casserole, cut them lengthways and set aside.
Add the bacon, leeks and onion to the casserole and fry until the onion is soft. Add the flour and cook for a further 2 minutes.
Return the sausages to the casserole with the potatoes, tomatoes and tomato puree. Add the stock or cider and season, being light on salt if you have used a stock cubes.
Cover and bake in the oven at gas 5/190'C until the potatoes are soft.
