Easiest Ever Strawberry and Orange Cheesecake

Now that there are a few occasions coming up with the Olympic Games and the Queen’s Diamond Jubilee, there will be parties and this is a summery solution to an almost instant dessert.
700g Philadelphia cheese
110g digestive biscuits
25g butter
juice and zest of 1 large orange
50g caster sugar
225g strawberries
1 punnet blueberries
1 x 8” flan tin with loose base

Melt the butter, then crush the biscuits to fine crumbs using a rolling pin or a food processor. Combine the two ingredients in a basin. Press the mixture into the base of the flan tin.

In a large mixing bowl, beat the cream cheese, sugar and orange juice until completely smooth and free from lumps. Then beat in the zest.

Pour the mixture into the flan tin, spreading it out evenly, cover with foil and chill for at least 4 hours.

Loosen from the tin and decorate with the strawberries & blueberries.
